As I've previously mentioned, Bri is a GODDESS when it comes to creating delicious Raw food. Her Pumpkin Seed Pate makes you want to do BACKFLIPS...it's that freaking good. She cooks alot like me -- no measurements, a bit different everytime, just eyeing it and tasting it - so delivering her recipes to those of you who "measure everything" is a bit difficult. ALAS, last night I paid close attention to her proportions and this is just about on the spot....
3 cups raw pumpkin seeds {"pepitas"}
1/2 cup olive oil
5 cloves garlic
juice of one lemon
big handful of fresh cilantro
*She may have put a touch of salt and cayenne pepper in, but I don't quite remember. Make and taste, touch up if necessary.
This stuff is soooo good that, as JamD would say, you just want to "smear it all over your face". As a dip for veggies, eaten by the spoonful, on top of salads -- however, whenever - this stuff is like crack for healthy foodies.
Last night she used the Pate in her Seaweed Wraps. She made 2 different variations, both that had the pate inside. One was stuffed with fresh green apples, raisins, spinach and the pate. The other was with quinoa, spinach, cucumber, and pate. Both: epic.
