After class last night I had two of my girlfriends over for some soup [and steamed broccoli]. I had made the soup the day before, and as always, it was more delicious the following day.
One small head of cauliflower, chopped
One green apple, quartered
One med size Vidalia onion, quartered
2 cups vegetable broth
One cup coconut cream (unsweetened)-- you can get this at trader joes
Salt, cayenne, cinnamon, nutmeg, cumin, turmeric and curry powder
Cilantro
Pepitas
Roast cauliflower, apple and onion in vegetable broth and seasonings on 300 for about an hour or until super tender. VitaMix/blend/purée and then transfer to a pot, adding in the coconut cream and allow to simmer for an hour. Season to taste (I go heavy on the curry powder and light on the cinnamon and nutmeg). Top with cilantro and pepitas and enjoy with friends!
