I love fall foods!! Here are some of my latest, most favorite fall simple, satisfying snacks...
Sweet Potatoe or Yam
-Clean it, scrub it, dry it
-Poke it with a fork a few times
-Microwave for 4minutes
-Slice open, drizzle with GHEE (no, not butter- ghee. Buy some at your local health food store. Not only is it delicious, but it has healing properties and is much better for you than butter)
-Generous sprinkling of: salt and ground cumin (the more cumin the better)
-finish it off with a huge handful of fresh cilantro...using way more cilantro than you think would be necessary.
*Make sure that you eat the skin too...it's the best part!
Swiss Chard
-in a skillet, caramelize (caramelizing is a slow process. It should take about 15/20minute on a med low heat) one large Vidalia onion
-to the caramelized onions add in lots and lots of chopped Swiss chard
Cook it down, adding in a small handful of chopped cilantro, salt, pepper and paprika
Beets
I have been roasting beets in their skins and then keeping them in the fridge, ready for when I need them.
To roast: wrap beets in tin foil and roast in oven on 325 for two hours.
Peel the beet and cut into bite-size pieces. Put in a bowl and toss with a pinch of salt and a pinch of cinnamon. Drizzle with olive oil and add the juice of one lemon. Toss with a small handful of chopped flat leaf parsley.
